Most people are familiar with cacao for what it becomes: chocolate. But before it ever reaches that stage, cacao begins as a vibrant, colorful pod growing directly from the trunk of a tree. Inside that pod are the beans, surrounded by a soft, white pulp. That pulp, often overlooked, is where things get interesting.

At Kualoa Ranch on Oʻahu’s windward side, that pulp is being transformed into something entirely new.

During the chocolate-making process, cacao beans are removed and fermented, and naturally, the surrounding juice begins to separate. This liquid, known as cacao nectar, is lightly sweet, floral, and tropical, often compared to flavors like lychee, pear, or honey. For years, it was simply a byproduct of production. Now, it is becoming a standout ingredient in its own right.

Through a collaboration between KualoaGrown and Pop Culture Artisan Pops, that once-overlooked nectar is now the star of a new, exclusive frozen treat available at the KualoaGrown Market.

This small-batch pop highlights the bright, fruit-forward character of cacao nectar in a way that feels both refreshing and unexpected.
